"This town needs a place like this."
These are the words of Marco Gonzalez, manager of the new family-owned Bamba Mexican Grill in Parker, which opened in January at 9771 S. Parker Road.
Gonzalez, who got his start in the restaurant business 10 years ago as a dishwasher, co-owns the grill with his three brothers.
He said they opened a restaurant in Parker because it is similar to Julian di Pula, his family's hometown in Mexico, where open land and horses dominate the landscape.
"This is like a dream for us. This town has good people who are friendly and nice," Gonzalez said. "We work really hard because we want to be here for many years."
The family aims to provide a casual dining experience and mouth-watering food at a low price. Bamba specializes in sizzling fajitas filled with your choice of steak, chicken or seafood.
Gonzalez said his favorite dish on the menu is the fajita combo that includes all three meats.
Pint-sized customers can choose from a kid's menu while their parents create a personalized enchilada combination and sip on a grande margarita. Kids eat free on Mondays and Tuesdays.
Gonzalez said lunchtime is busy, dinner has been consistent and the "people are happy." Several of his family members work at Bamba, including his nephew, Jose Gonzalez, who is the head chef.
He said having a family run business is beneficial because they work well together and it allows Bamba to operate more smoothly.
"So far there are no complaints. I have time to come to each table to make sure everyone is doing good," Gonzalez said. "That is what we want: good service and good food."
He recommends the fajita quesadillas as an appetizer and carne asada steak wrapped in a warm tortilla and surrounded by a colorful array of vegetables for dinner.
For information, call 303-840-9191. Business hours are from 11 a.m. to 9 p.m. Monday through Thursday and 11 a.m. to 10 p.m. Friday, Saturday and Sunday.
