Restaurant a family affair
Holy guacamole, there's a new Mexican food restaurant opening in Castle Rock.

3 Margaritas Family Mexican Restaurant is slated to open, possibly the last day of March, in the former Sharri's restaurant at 150 Wolfensberger Road.
"We started the company in Seattle, Wash., in 1990," said restaurant owner J. Manuel Morales R, "and we opened 10 there."
Morales sold the restaurants but kept the name.
"The first one we opened in Seattle, we named Las Margaritas," Morales said. "We came to Denver and someone owned this name already here in downtown Denver. I talked with the guy and he said, 'Well, you cannot use this one. Say any number.' And we said, 'Well, three.'"
Morales then headed east from Washington.
"We opened two more in Wyoming," he said. "And then five years ago, we started the company in Fort Collins ... and Colorado Springs."
Morales, 54, did this with the help of his two brothers, one of whom has nine restaurants in Denver.
"He became mayor [of Cuautla] in Mexico," Morales said. His brother took office Jan. 1.
Morales grew up in Guadalajara.
The uniquely shaped restaurant affords Morales 3,600 square feet for his operations. The interior is not yet ready for the hungry, but construction resumes earlier this month.
"We started remodeling without a permit," the Centennial resident said. He expected to get the permit soon.
As soon as work resumes, Morales said, he can unleash all the new furniture he has held up in a storage unit in the restaurant's parking lot.
Don't expect the same old fare at the restaurant, though.
"The menu is really extended," said Morales. "Seafood, steaks and chicken."
On the menu for the restaurant's interior are decorations, brand new tables and chairs and "very beautiful booths."
"It's going to be nonsmoking," Morales said, extending an apology to those who smoke.
The restaurant will seat 142. Morales said he saw the vacant building while passing between his ranch in Stone Canyon. He called the owner, who lives in Oregon.
3 Margaritas will have a staff of 24, and all of the dishes will be prepared fresh on site.
"Thank you for giving me the good opportunity to come to Castle Rock," Morales said. "I will take care in the best way, with the respect."
