Alijandro's to open in February

Castle Rock's Kirk Reinebold loves burritos smothered in green chilie - so much so that he and his wife, Neisha, are opening a restaurant on Wilcox Street.
Alijandro's Bold Burrito, 106 S. Wilcox St., in the shopping center with the Philip S. Miller Library, is slated to open the first part of February.
The restaurant is named after the Reinebolds' 2-year-old son, Alexander.
"The Mexican cuisine is something that is in my family background because my stepmother ... and a lot of her family worked at a Mexican restaurant in Denver," Kirk said. "As I grew up, we were always having what we called 'taco nights.'"
Kirk said he has always been a fan of the Chipotle and Q'doba restaurants but could not get into those franchises.
Alijandro's Bold Burrito will be similar to those eateries and will specialize in rapid service.
The 2,600 square feet of business space will handle 100 customers.
"The menu will be a burrito-based," Kirk said. "The Bold Burrito will be approximately a pound. There will be choices in tortillas."
Tortilla choices include traditional, a chili tortilla, a tomato basil tortilla and a vegetarian tortilla.
Kirk said Alijandro's Bold Burrito will be a first of its kind in Castle Rock.
"We will have a steak burrito, a chicken burrito, a shredded chicken, a shredded steak, ground beef and also a vegetarian," Kirk said. "Between the rice, the beans, the meat - everything that's in it - it'll be roughly a pound."
Kirk said the steak used to make the bold burritos will be marinated in a sweet margarita mix. They can be made hot and spicy with a variety of sauces. Kirk will offer three kinds of beans.
"We'll have a pico de gallo, a medium jalapeño and a hot habanero," Kirk said of the salsas proposed.
Alijandro's Bold Burrito also will offer tacos, quesadillas, taco salads, nachos and specials for the niños - children. The restaurant will be nonsmoking.
"For our grand opening - we don't have a set date yet - we'll have Broncos cheerleaders doing a signing," Kirk said, adding that he and the owner of Castle Rock Resale Center, a new car lot going in on Wilcox Street where My Friends Grill & Bar used to be, plan on some joint promotionals.
"I'm planning on doing a lot with the community," Kirk said. "Right now I'm doing a lot with the high school, with the Subway and I plan on continuing to do that with Alijandro's."
The Reinebolds own the Subway franchise next door.
Kirk said he will sponsor sports teams, wrestling tournaments and volleyball.
"I'm hoping to dedicate a section of one of the walls to art done by the schools - Castle Rock Middle School, Douglas County High School, some of the elementaries," Kirk said.
The 29-year-old Kirk grew up in Sedalia and is a 1992 graduate of Douglas County High School.
Alijandro's Bold Burrito will be open from 10 a.m. to 10 p.m., Mondays through Saturdays; and from 10 a.m. to 8 p.m., Sundays.
