Rubio's Baja Grill opens at Crossing at Stonegate


In 1978, Ralph Rubio did what he loved most - he went to the beaches of Baja, Mexico, with his buddies for spring break. There he discovered something that would change his life, that of his family and maybe now even a few residents of Douglas County.

In 1978, Ralph Rubio did what he loved most - he went to the beaches of Baja, Mexico, with his buddies for spring break. There he discovered something that would change his life, that of his family and maybe now even a few residents of Douglas County.




On that trip, Rubio discovered fish tacos at a roadside stand in San Felipe. After talking the stand's owner into sharing the recipe, Rubio returned home and tried it on his family.




In 1983, at 26, Rubio gave up life as a full-time surfer and, with the help of his father and family, converted a failing California hamburger stand into the first Rubio's Baja Grill.




Seventeen years later, Rubio's expansion continued with the opening of a restaurant in the Crossing at Stonegate Shopping Center, 17051 Lincoln Ave. It is the seventh Rubio's to open in Colorado and one of 112 Rubio's nationwide.




Rubio's Baja Grill serves "authentic" Baja Cuisine, restaurant officials said. Its "culinary claim to fame" is the San Felipe fish taco: crispy beer-battered fish placed in a soft corn tortilla with salsa, a tangy white sauce, shredded cabbage and a squeeze of lime.




Also served are soft-shell tacos with fresh cilantro, onions, salsa fresca, chipotle sauce, shredded cabbage and spicy boiled beans. Marinated steak, chicken and seafood are also available and are chargrilled over open flames.




Rubio's Baja Grill makes its salsas, sauces and guacamole fresh daily, the restaurant said. The beans are never fried.




Prices range from $1.79 for a fish taco to $5.89 for combination meals.




Rubio's Baja Grill is open from 10:30 a.m. to 9 p.m., Sunday through Thursday, and 10:30 a.m. to 10 p.m., Fridays and Saturdays.
